702/1038 - Parsnip croquettes

I decided to make these little croquettes gluten free and so substituted breadcrumbs for coarsely ground almond meal. The resulting morsels were lovely and crispy, with a nutty flavour that paired beautifully with the parsnip. This recipe marks the end of the parsnip chapter, making that thirty two of one hundred and twenty five chapters officially completed. Of course this number might change next year as I contemplate upgrading yet again to the 30 year anniversary edition! Stay tuned for my final decision...
