This is a recipe I have made too many times to count.
Stephanie's banana cake is hands down one of the best banana cakes I have ever tasted. Incredibly fluffy and light, it has just the right amount of sweetness. This cake is also quite fabulous with the addition of chopped walnuts or pecans. There is absolutely no need to ice it as the texture of the cake is brilliant as is.
I can't see this one lasting longer than the weekend.
It'd be lucky to last the first 5 minutes home from school in this house! Lucky I've got 2 loaves of banana and vanilla loaf waiting for the hungry mob when they get home! :0)
