Okra is not a vegetable I would generally use, but cooked with onion, garlic, tomato, lemon juice and ground coriander seeds, I have discovered that it really is a very tasty vegetable. The texture can be a little slimy and although this can be offputting, apparently it is very good for you. As a bonus, it can also help to thicken casseroles.
My effort will be served alongside Stephanie's home-made lasagne tonight (made by the lovely Chas) which I think will work very nicely.
